When I think of my Gramma, there are a few things that immediately come to mind…her sass & quick wit, her open door and constantly full house, her tea biscuits and chocolate chip cookies, and of course, her peanut brittle. She has been gone for 3 years now, but I still carry on many of the traditions that she instilled in us. It doesn’t matter who I make her peanut brittle for, I am always told that it is amazing and the best they have ever tasted…which is usually followed by “I need the recipe”!!! So here it is…enjoy.
I’m not one for getting all my ingredients out at once. I get out what I need one at a time as I need it and then put it back right away…what can I say, I’m a neat baker/cook. For the sake of this post, I pulled everything out at the beginning.
I’ll post the full recipe at the end of this post but I will explain step by step as I go.
Start by mixing 1 cup of white granulated sugar and 1/2 cup of corn syrup together.
I make the whole recipe in a large 4 cup measuring cup. Cook in microwave on high for 3 1/2 to 5 minutes (4 minutes in my microwave is perfect but you may need to adjust it for yours). Stir mixture after the first 2 minutes, then continue cooking.
Add 1 1/2 cups of salted peanuts and stir. Cook on high for 3-4 minutes (I do 3 minutes) until golden colour.
Add 1 tbsp of butter and 1 tsp of vanilla. Stir until butter is melted. Cook on high for another minute.
The mixture will come out very bubbly and extremely hot…be careful.
Stir in 1 tsp of baking soda. The mixture will become very foamy. You will have to act fast…once you mix in the baking soda, quickly pour onto a baking sheet (I don’t grease mine and I don’t have any trouble with it sticking).
Once the mixture is poured onto the baking sheet, spread it out slightly and let cool.
Once cool, break into bite sized pieces and store in ziplock bag or air tight container.
Microwave Peanut Brittle
- 1 cup white granulated sugar
- 1/2 cup corn syrup
- 1 1/2 cups salted peanuts
- 1 tbsp butter
- 1 tap vanilla
- 1 tap baking soda
Heat sugar and syrup in microwave on high for 3 1/2 to 5 minutes. Stir after the first 2 minutes. Add peanuts. Cook on high 3-4 minutes until golden colour. Add butter and vanilla and stir until butter is melted. Cook on high for 1 more minute. Stir in baking soda. Pour onto baking sheet and spread mixture out slightly. When cooled, break into bite sized pieces and store in an air tight container.
